Old Scottish Recipes: Scottish Roast Chicken

SCOTTISH ROAST CHICKEN

Ingredients:

4 onions, chopped
1/4 cup butter
1 cup quick cooking oatmeal
1 teaspoon salt
1/2 teaspoon coriander
1/2 teaspoon pepper
1/8 teaspoon nutmeg, ground
3 pounds fresh whole chicken
1/4 cup margarine, melted

Direction:

1.Preheat oven to 350 F.
2.In a skillet saute 4 chopped onions in 1/4 cup butter until light brown .
3.Stir in 1 cup quick cooking oatmeal (uncooked),salt, coriander, pepper, and nutmeg. Cook until the oats are golden brown and crisp, about 3 to 4 minutes.
4.Fill a chicken with the stuffing. Fold the wings across the back with tips touching. Place the chicken, breast side up, in a shallow roasting pan. Cut onions in half and arrange around the chicken. Roast, uncovered, for 35 to 45 minutes, basting the chicken with melted margarine.
